    Great article - I'm happy to say that I had leaned most of what they spoke of in my long life. Lots of learning has gone on in my RV life - I keep most fruits (including tomatoes) in a fruit basket stored in my cool and dark oven. Occasionally, I can't use all the avocados, for instance, so I refrigerate them after they partially ripened. I wasn't familiar with the storage of eggplant outside the refrigerator; I guess that, when I buy eggplant, it's for a specific purpose and I use it right away. Another thing I'm becoming knowledgeable about is that I've historically used the refrigerator for long-term storage of condiments, etc. Not an economical idea; now I try to buy smaller containers and keep, for instance, only one jar of jam open at a time.

  2. Great information--thank you! We've found that the best way to store food is to eat it within a week. Buy only what you can eat in a week & prep it to eat immediately. We eat more vegies & fruit that way! Our goal is to eat 5 cups of veg a day--it's actually pretty easy to do that.
