Let me think for a moment . . . I like the idea of being able to chef out menus; but, then, I also like the experience of pondering menu options in the restaurant. Well, I'd still be able to 'ponder' the daily specials and / or menu changes due to season, availability, etc. One of the delights in making a reservation at Alice Waters' restaurant all the years I lived in that area, was that it was possible to know exactly what the menu would be (barring last-minute changes) on that long-awaited visit.
I remember my first time at Chez Panisse. We were disappointed because steak was the main course of the evening. It turned out to be the best steak I had ever eaten. Alice has of course become an icon in the culinary world.
